Award-winning UMA Restaurant at Pan Pacific Perth have launched a new seasonal menu. Inspired by sustainable cooking using the very best locally sourced produce. Celebrating influences from the Incas, the menu at UMA is an important expression of Peru’s culture. Apart from four native Peruvian chillies, the dishes are brought to life almost exclusively with the very best West Australian produce.
The new seasonal menu focuses on dishes that will warm you up in the cooler incoming months. With a focus on grains and produce that are grown at high altitudes in Peru and even huacatay. A herb found in abundance in the Andes. With delicious dishes such as the ceviche morado. The best way to sample everything is through UMA’s “Journey Through Peru” tasting menu with four courses and the option of wine pairing. All you have to do is sit back, relax and let your taste buds sing with the flavours of Peru!

Pan Pacific Hotel Perth is the first hotel to be accredited by Buy West Eat Best. With UMA’s menu
celebrating the diverse and inspiring produce West Australia has to offer. The locally sourced produce and waste-conscious menus show’s the restaurants commitment to the environment. The menu showcases a nose to tail cooking concept in produce prepared in many of the hero dishes. Such as the Langostinos Shark Bay tiger prawn skewers plate, with the chefs peeling the prawns to use the prawn shells when creating the Peruvian pumpkin bisque puree.
Masterclasses
If you’re looking for unique culinary experiences, UMA offers two masterclasses available for those eager to explore two of Peru’s most authentic menu staples. The Ceviche Masterclass, will let you experience culinary expertise. With an opportunity to taste three of UMA’s most popular ceviche’s, paired with a diverse selection of traditional Peruvian pisco cocktails. Or take the Pisco Sour Masterclass. Behind all of this greatness is Xerxes Bodhanwala, the Executive Chef of Pan Pacific Perth and UMA restaurant. Hailing from Mumbai, India, his passion for the culinary world ignited at the age of 14 while working in his mother’s café in Bangalore. Trained at Le Cordon Bleu, his style embraces bold flavors, refined rustic presentation using colourful and seasonal produce.
